3 Potatoes
A bowl of cold water or water with some salt
A Pinch Salt
Water, to boil the potatoes
1½tsp Butter
2tbsp Milk or cream
¼ tsp Black pepper
¼ tsp Salt
⅓cup Spring onions

Firstly, rinse the potatoes and remove the potato skin with a peeler (if you'd like to have more texture you can skip this part)
Wash the potatoes again, cut it into small cubes (so that it cooks faster).
soak them into a bowl of cold water or water with some salt, to wash away excess potato starch & prevent from oxidizing. Drain off the water.
In a pot of water, add in a pinch of salt and bring it into a boil. add in the potatoes cook for around 8-12min (depending on the size of the potatoes).
How to know if the potatoes is ready? Poke a fork or skewer into the potato, it should be easy to poke in or even soft enough to mash.
drain the potatoes, set aside to cool.
there's 2 methods of making the mash potatoes = smooth & chunky
smooth: gently break the potatoes into smaller pieces using a harder spatula, when the potatoes broke into smaller it will eventually go through the sieve and have smooth texture mash potatoes.
add the milk and butter while it's still warm.
Chunky: mash the potato without going through a sieve, add in milk and butter between.
