How to make Avocado Crepe Cake

Have you eaten Avocado Crepe Cake? Isn't it special, try this recipe? For this recipe, I've been trying to make this long time, for a perfect recipe.

Ingredients:

best preserve 3-5 days, cover with cling wrap store in the refrigerator


Crepe batter

4 Eggs

65g (⅓ cup) Sugar

1g (a pinch) Salt

5g (1 tsp) Vanilla extract 

½ Avocado

250g Cake flour 

750ml Milk

90ml Melted butter


Cream

2½ Avocado

1 ½tbsp Honey

1 tsp Lemon juice

200-300ml Whip cream (make sure it's cold 🥶, in order to whip up)


Directions~

  1. Avocado crepe: In a blender or a food processor, add in ½ Avocado and 100 mL of milk, blend until smooth like smoothie~ no chunks

  2. In a medium-size bowl, beat 4 eggs, sugar, salt and vanilla, whisk until the sugar partly dissolve.

  3. Then pour in the thin avocado mixture, whisk. Sieve in half of the cake flour, add in a quarter portion of milk, mix, then gradually add in the rest of the milk & flour, whisk all together, no lumps

  4. lastly, add in melted butter, mix.

  5. Strain the batter through a sieve into a measuring cup (for ease). Cover with cling film, refrigerate for an hour or rest at room temperature 30mins. (this step is to let the gluten in the batter relax)

  6. After 30-60 min, stir the batter. Heat up a 24cm diameter pan on medium-low heat, grease the pan if needed. Pour ⅓cup of batter onto the pan, twirl around the pan. Cook for 1-2 min or until the surface is not wet or bubbles appear. *the first 2-3 pieces might not be perfect,

  7. Flip the crepe, cook for about 30 seconds. Then place on a wire rack or plate to cool off.

  8. Repeat for all of the crepe batter is used.

  9. Make the cream: Whip the cream with an electric mixer, for a minute, then add in lemon juice, continue whipping until soft peaks.

  10. add in the avocadoes and honey whisk until combine. *add more honey if you think not sweet enough

  11. on a Cake Turntable place a cake board or plate [*put some parchment paper at the sides of the cake board, if u're concern of the neatness of the plate], stack on crepes on top of each other with cream between each layer. Try to get the piece with largest surface on the bottom and the nicest piece on top.

  12. Once assembled, u may trim the edges (with a desired size plate or bowl on top of those crepes), this make it for a neater and cleaner look. *this step is totally optional

  13. Refrigerate the crepe cake for 30min to an hour for firmness, and serve while it's cold.
